Mo’Bay Beignet & Burger Co. opening in Birmingham area by end of 2026

A Mobile original is taking its next step north.
Mo’Bay Beignet Co., which started on Dauphin Street in downtown Mobile, announced plans to open a Birmingham-area location at Valley Post in Chelsea. The restaurant will operate under a new combined name, Mo’Bay Beignet & Burger Co., bringing together the original brand and its sibling, Bay Town Burger Co.
Mo’Bay’s new Chelsea location
Founder Jaclyn Robinson opened the first Mo’Bay Beignet Co. in Mobile nearly seven years ago. She launched Bay Town Burger Co. in West Mobile in fall 2021. The brand now has locations in:
- Mobile
- Huntsville
- Hattiesburg, Mississippi
- Truist Park in Atlanta
Robinson shared her thoughts on the journey so far:
“So much has happened in the almost 7 years since I first opened the doors to Mo’Bay Beignet Co. in Mobile, AL. So many experiences…tons of highs, a few lows, lots of lessons learned…always growing and evolving.”
She also said the new spot will stand apart from the brand’s other restaurants:
“I’m excited about what this new adventure looks like. It will be unique to the Birmingham area and a location unlike any other that we have had yet.”
When Mo’Bay Beignet & Burger Co. will open in Chelsea
A team is working to open the location before the end of the year. No opening date has been announced.
Robinson encouraged longtime Mo’Bay fans to follow the new location on social media and share it with friends and family in the Birmingham area.
